Almond Flour Pancakes

Almond flour pancakes:
  • 4 organic cage-free eggs
  • 1 cup blanched almond flour
  • 1 tsp vanilla extract
  • dash ceylon cinnamon to taste
  • coconut oil or organic ghee for frying pan

Topping (optional):

  • coconut whipped cream
  • maple syrup


  1. In a large bowl, mix eggs
  2. Add the remaining ingredients to create your pancake mix
  3. Add coconut oil or ghee to frying pan and start flipping your pancakes!
  4. Top with your choice of toppings! I used maple syrup and coconut whipped cream, which unfortunately melted before I could snap a good photo -- fail. It still tasted delicious though!!
