Creamy Broccoli Soup

This soup is so easy to make, gluten-free, vegan, and delicious! My boys even loved it! It's such an easy recipe that I even used frozen organic broccoli that I had in my freezer that we bought from Bj's. Even though I love the taste and quality of organic fresh vegetables, sometimes my life is just so hectic and I'm too lazy that organic frozen veggies come in handy! 


  • 3 cups broccoli
  • 4-5 cloves garlic
  • 1 cup raw cashews
  • 1 cup fresh spring water
  • himalayan or high quality sea salt (to taste)
  • freshly cracked black pepper (to taste)


  1. Bring 1 cup of water to a boil
  2. Add 1 cup of raw cashews to a blender and add boiling water. (DO NOT BLEND YET!) Let soak for 20 minutes then blend.
  3. Steam your broccoli until soft
  4. Peel your garlic cloves
  5. Add your broccoli, garlic, salt, and pepper to your blender with your already blended cashews and blend.
  6. Voila! Enjoy!
