Easy Baked Eggplant

I love eggplant and feel like I could put it in almost any dish! It is so versatile and has so many health benefits! You can add it to a pasta dish, tomato sauce, stir fry, sandwiches, on top of brown rice, with quinoa, and so on! I have found this to be the easiest way to cook my favorite vegetable!

  • 1 eggplant
  • himalayan or high quality sea salt to taste
  • freshly cracked black pepper
  • 4-5 cloves garlic or garlic powder
  • extra virgin olive oil

Recommended tool: pastry brush


  1. Preheat oven to 375 degrees
  2. Wash eggplant, cut off ends, and slice into circles
  3. Lay out on a plate and sprinkle salt over each eggplant slice
  4. Let the eggplant "sweat" for 15 minutes or so
  5. Rinse the salt off of the eggplant slices and pat dry with a paper towel
  6. On a baking sheet or Silpat mat, drizzle olive oil and lay eggplant slices on top
  7. With a pastry brush, brush olive oil on top of each eggplant slice
  8. Sprinkle salt, pepper, and your crushed garlic or garlic powder on top of each eggplant slice
  9. Bake for 20-25 minutes or until tender
