Lentil Curry

Prep Notes

Don't forget to cook your favorite choice of rice in your rice cooker to go with your lentil curry! For this dish, I chose organic basmati brown rice! 

Cooking Time



  • 2 cups organic dry lentils
  • 6 cups filtered water or 6 cups organic veggie broth or 3 cups filtered water & 3 cups organic veggie broth
  • 1 organic yellow onion
  • 3-4 long organic carrots
  • (optional): 1-2 small potatoes diced
  • 1 - 7oz glass jar organic tomato paste
  • 1 bunch of organic spinach
  • 6-8 cloves of organic garlic
  • 1-2 Tbs organic curry powder
  • Himalayan salt or organic sea salt to taste
  • Bunch of cilantro
  • Coconut oil or organic olive oil for cooking


  1. Chop up your onions and peel your garlic
  2. Add coconut oil or olive oil to your pot and heat it up on medium heat
  3. Sauté your onions and garlic until soft and fragrant
  4. Chop up your carrots (and potatoes if desired) and add to onions. Sauté for 3-4 minutes.
  5. Add lentils and water or broth. Bring to a boil for 3 minutes.
  6. Add seasoning and tomato paste.
  7. Turn heat down to a simmer and cover. Cook for about 30 minutes or until cooked, adding the chopped spinach in the last 10 minutes. 
  8. Season with more salt and black pepper if desired and top with chopped fresh cilantro! Enjoy!
