Roasted Beet Sandwich


Prep Notes

I used a french baguette for this sandwich because it was the only organic loaf of bread left at my grocery store but you can use any type of bread you love for sandwiches!

Ingredients

  • your choice of organic bread
  • 2-3 washed beets or 1 package of love beets® (which are pre-cooked organic beets if you are short on time)
  • baby arugula
  • goat cheese
  • 1 avocado
  • olive oil
  • salt
  • pepper
  • garlic powder
  • red wine vinegar

Directions

  1. Wash and dice your beets into little squares. Drizzle with olive oil, wrap in tinfoil, and bake in the oven or microwave oven at 425 degrees until tender. If using the pre-packaged beets - drizzle with olive oil, wrap in tinfoil, and just heat up since they are already cooked
  2. Heat up your bread in the oven or microwave oven.
  3. Drizzle red wine vinegar on both sides of your bread.
  4. Spread goat cheese on both sides of your bread.
  5. Add your warm, diced beets on one side
  6. Put slices of avocado on the other side of your bread and sprinkle salt, pepper, and garlic powder.
  7. Top with arugula
  8. Close your bread together and DIG IN!!!
  9. Savor the deliciousness!!!!
