Easiest Zucchini Fritters

This is the easiest, simplest recipe I could come up with for gluten-free zucchini fritters. There are also so many different ways to spice these fritters up and add flavor with added ingredients and sauces. If you are one of those people that enjoy experimenting with foods but need a base recipe to go off of, this is it! This simple recipe is so delicious the way it is but I will definitely be adding more recipes for variations of zucchini fritters in the future -- so stay tuned!


  • 3 organic zucchinis
  • 2 organic cage-free eggs
  • 1 cup blanched almond flour
  • garlic powder to taste
  • himalayan or high quality sea salt to taste
  • freshly cracked black pepper
  • coconut oil for pan-frying


  1. Whisk eggs in a large bowl
  2. Wash and cut off the ends of the zucchini
  3. With a cheese grater, finely grate the zucchini and toss in to the bowl with the eggs
  4. Add almond flour 
  5. Add seasonings and mix well
  6. Heat coconut oil in a frying pan on medium heat
  7. With a spoon, drop small balls of the zucchini mixture into thefrying pan 
  8. With a spatula, flip when ready -- approx. 4-5 min. (just flip it like you would pancakes)
  9. Place each fritter on a plate and enjoy! 


Tip: I am always adding coconut oil in between fritters on the frying pan -- this helps keep the pan clean and the fritters from sticking to the pan
